Filet Mignon (Tenderloin)

Incredibly delicious! Our Devon filets are cut at 1 1/2" in thickness; 2 per package. (You will be charged based upon actual weight after your order is assembled.)

We're partial to using a pre-heated cast iron skillet. Lightly cover the filet with freshly cracked pepper and kosher salt. Sear both sides with high heat, using a bit of olive oil. Aim to char the crust (about 3-4 mins on each side), but keep the center of the steak nice and pink. Reduce the heat for further internal cooking, but only for a short time. For a flavorful topping, mix softened butter with chopped parsley, basil and tarragon, along with a squeeze of Meyer lemon.
