Cut plate ribs are also known as beef plate short ribs. This is a flavorful meaty cut from the short plate section of the cow, located just below the rib primal (beneath the ribeye). They are bone-in, meaty, and about 6-8 inches long. High marbling makes them ideal for slow cooking - fat rendering beautifully to keep the meat juicy. They can be smoked (Texas style), braised, oven roasted or slow cooked.
